A Healthy Thanksgiving isn't an unreasonable goal. There are many great recipes for healthy additions to your typical holiday meal. Here are 2 ideas to spice up your Thanksgiving meal, all while staying healthy!
Both of the recipes to follow are healthy, full of lots of vitamins and vegetables to enjoy. Also, both are easy recipes and don't really require an expert chef! None of the ingredients should be too hard to find, in fact most of them are probably already in your pantry!
This dish is pretty quick and easy. Your family and friends won't expect this tasty combo of average vegetables!
- 1 pound broccoli, chopped
- 1/2 pound potatoes, peeled and diced.
- 4 scallions, thinly sliced
- 1/2 quart of water
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of butter
- 1/4 cup lemon juice
- Simmer broccoli, potatoes, and scallions in a pot of water until soft and well cooked.
- Next, drain the water. Be sure to save half of the water used for the vegetables for later!
- Using a food processor or blender, combine the vegetables and the half of the cooking water you saved.
- Mix in the salt, pepper, butter, and lemon juice. Serve and enjoy!
Tip: Don't be afraid to substitute the broccoli for other green vegetables! Also be careful not to use too much water otherwise your mixture will be very soupy. Consider adding water in small increments as you puree.
Not only does this dish look amazing, but it tastes great. It is a nice recipe to get into the holiday spirit!
- 2 cups of chicken stock (can be canned, or make your own! There are low sodium and lower fat options also.)
- 1/2 cup of brown rice
- 1/2 cup of wild rice (substitute in rice of your choice if you don't like these types)
- 3 tablespoons of butter
- 3 onions, sliced into 1/2-inch pieces (Modify based on the size of the onions)
- 1 tablespoon of brown sugar
- 1 cup of dried cranberries
- 2/3 of a cup sliced mushrooms
- 1/2 of a cup slivered almonds, toasted
- 1/2 of a teaspoon orange zest
- salt to taste
- ground black pepper to taste
- Combine the rice and broth in pan and bring to boil.
- Reduce the heat to low.
- Then cover and cook for approximately 35-45 minutes or until rice is tender and broth has been soaked up. Be sure to stir ever so often to prevent sticking.
- In a skillet, melt the butter.
- Add in the onions and sugar.
- Saute them until butter is absorbed and onions are translucent and soft.
- Lower heat and cook onions for another 20 minutes or until they are caramelized.
- Then mix in cranberries and mushrooms.
- Cover skillet and cook for 10 minutes or until berries start to swell up.
- Stir in the nuts and orange zest.
- Fold this mixture into the cooked rice.
- Add the salt and pepper and enjoy!
