Middle Eastern food has become a staple food for millions of homes across America. There's nothing quite like its unique blend of rich taste and high health. If you're interested in trying out your own homemade Middle Eastern recipes, this relatively easily prepared vegetable and couscous pilaf is a good start.
- Cauliflower florets
- Broccoli florets
- Green scallion
- Chicken broth
- Orange zest
- Orange juice
- Whole-wheat couscous
- Finely chop four cups of cauliflower and broccoli
- Grate one teaspoon of orange zest
- Thinly slice 1/2 teaspoon of the green scallion
- Pour 1 tablespoon of extra-virgin olive oil in a large sauce pan
- Place your saucepan on medium heat and add your cauliflower and broccoli. Add 1/2 teaspoon of salt and stir until soft.
- Now, slowly pour in 3/4 cup of chicken broth, stirring it heavily to evenly spread across the veggies.
- As you stir, add your orange zest, 1/4 cup of orange juice, and 1/4 cup of currants.
- Keep stirring until everything is mixed into a nice big, thick lump.
- Increase the heat to boiling and add 2/3 cup of couscous and your sliced scallions.
- Stir until well blended, remove from the heat, and cover. Let it sit until thick.
There are several different ways you can serve this luscious side dish. It makes an excellent filler next to a hearty lamb steak or a light salmon. However, it also serves well wrapped in a delicious pita.
The vegetables in this side dish give it a heavy dose of vitamin C. In fact, a single one cup serving can give you as much as 78% of your daily value for only 163 calories! The whole-wheat couscous gives it six grams of fiber and protein.
