Many recipes call for sauces and purees that you can easily make from your abundance of the red fruit, but you will want toremove the seeds and skins before preserving. But how can you peel that delicate little red orb without squishing the daylights out of it?

One easy way to peel a tomato is to freeze it! You can place the tomatoes in resealable freezer bags in their whole unpeeled state. When you want to get one for a recipe that asks for unpeeled tomatoes, simply take one from the bag and the skins will pull right off. The drawback to this method is that the seeds will still be intact. If you want to eliminate the seeds, the blanching method is better.

To blanch, plunge the fresh tomatoes into boiling water for about 30 seconds. Use a colander or slotted spoon to remove them from the boiling water and cover with ice water for about a minute. The skins will pop off easily. Next, if you want to remove the seeds, cut the tomato in half around the side, not top to bottom. Simply scoop out the seeds with a small spoon or your finger.

Tomatoes may be ground, chopped, pureed, or sauced and then may be canned or frozen for storage for the winter to come. Tomatoes, a great anti-oxidant, are wonderful now on that sandwich. In a few months, you can enjoy tomato soup or marinara sauce and relive those fresh summer memories!
