Last week I finally past my last exam, missing an A by one point, good girl. Nevertheless, my relief was too great to worry about that and the idea of 4 months of freedom, travelling, meeting old friends and family, was too pleasant a thought. Maybe you've noticed that there were floods in Prague recently and I´d just found a summer job in a restaurant right next to the river. Amazing place, I was so glad. Less than a week after my first working day there was about 1 meter of water inside. The water has subsided since then and my cute restaurant is already being reconstructed.

On the other hand, coming back home to Slovakia felt so good. So much nature and greenery even brought back my allergy, red eyes, sneezing all the time, I decided to spend this day at my grandparents´ house. You know how it works with grandmas, the main point of your visit for them is preparing your favorite dish in the best way they can, always ending up by "well, it could have been in oven for a longer time“ or "I shouldn´t have left it in oven for such a long time“ but for you it always tastes the same, always great. This recipe is actually very simple, that´s why you should choose the good quality ingredients. Going for free-range chicken is definitely a good choice, local farmers often offer their products and it is worth it to find one and invest in nice chicken which grew naturally without any help of antibiotics. As you are facing a grandma´s recipe don´t even try to make it low-fat. Bacon is irreplaceable ingredient bringing a full taste together with herbs. I must warn you that dumplings are really addictive, grandma had to double the portion when making it at some family occasion as we all end up by adding some extra dumpling although there are no potatoes or chicken left on our plates, just as a „dessert“. I hope that your family will fall in love with this recipe as much as mine, enjoy.

Grandma's Crispy Chicken with Bacon Dumplings 


  • one free-range chicken
  • 6 medium potatoes
  • Half cup of wholemilk
  • 2 tablespoons of butter,
  • chives



  • 5 pieces of bagels or other savory pastry
  • 1 medium onion, diced
  • 100g bacon
  • 1 egg
  • Tablesoon of dried marjoram
  • Handful of fresh parsley
  • Salt, pepper


1. Separate the chicken in two halves, salt it, put in an ovenproof pan with some water and bake for about 30 minutes at 180°C.

2. Meanwhile cut bagels in about 1 cm dices, roast on a pan until slightly brown and crispy and put in a big bowl.

3. In a pan roast chopped onion with diced bacon until the onion is tender. Mix into the already cut rolls. Add egg, marjoram, parsley, season with salt and pepper and mix well.

4. Leave resting for about one hour so that the tastes incorporate well.

5. Take the chicken out of oven. Put the both halves on the side. Mix the bagel mixture with juice left from chicken and form a heap it on the side of ovenproof pan. You can also spread it all over the bottom and just cover with chicken depending on how crispy you want it to be.


6. Put in oven for another 30 minutes.

7. Meanwhile peel potatoes and cut in dices. Cook for 20 minutes in salty water until tender inside. Add milk and butter and mash to your prefered structure. Finally incorporate fresh chives.


The benefits of free-range chicken

It is important not to get confused by different names of chicken, keep in mind that "free-range" and "cage-free" are far from the same ones. Cage-free chicken haven´t necessarily been raised outside and free-range chicken label can also mean just a few hours a day outside.

Not only the chicken muscles but also eggs profit from fresh herbs consumed. Buying free-range eggs you see a remarkable difference between yolks which are shiny yellow or even orangish. They are said to contain more vitamine A and E as well as omega-3 acids.

Pastured chicken

There is no legal standard for "pastured", this label is mainly used by small farmers who allowed their chicken a free acces to natural pastures where they can peck, nutrition containing mainly herbs and insect and being fed only during dry seasons and winter.

Organic, naturally raised, no hormones, no antibiotics

Does not refer to treatment of animals, the nutrition , however, can not contain growth hormones, antibiotics, genetically modified feed, or animal by-products.

Vegetarian fed chicken

One of more unusual labels, refereing to the find of nutrition the chicken had. It however means that chicken had no acces to free pasture as their nutriron would contain a significan amount of insect.

Natural vs. naturally enhanced chicken

Both of the labels refer to procession after the slaughter of animal. While natural means that there are no additional ingredients added "naturally enhanced" means enahcing the flavour of chicken by adding salt or suger or even pumping broth from chicken bones inside the chicken.
