I am thrilled that so many of my friends honor my new life style and some even share their favorite recipes that they want me to try. This salad, shared by Jill, has some most unusual ingredients, but they do go together very well. The original recipe notes, a medley of ingredients that will tantalize your taste and surprise your palate! This original recipe was found in A Slice of Paradise - Junior League of Palm Beaches. Jill's suggestion to use a trifle bowl brings back a use for a beautiful crystal bowl that remains on a top shelf in my home.
Literally a Sunset Salad
It is summertime, when the living is easy or at least easier, or so the story goes. Create a salad with great ingredients and lighten up your lunch or dinner. Take the time to make it look beautiful as we always eat with our eyes first!
Sunset Salad with Honey Dressing
1 cup shredded purple cabbage
1 cup shredded carrots
1/2 cup shredded Colby cheese
1/2 cup raisins (golden raisins are best here)
1/2 cup cashews
1/4 cup sesame seeds
1 cup alfalfa sprouts
1 banana, peeled and sliced
1 cucumber, peeled and sliced
Layer all ingredients, except dressing, in a serving plate or in a clear glass bowl. Serve with the Honey Dressing
1/2 cup sugar
1 1/2 teaspoons paprika
1 1/2 teaspoons salt
1 teaspoon dry mustard
1/2 cup vinegar ( I opted for apple cider vinegar with great success)
1 cup oil
1. Combine sugar, paprika, salt and dry mustard in a blender or food processor.
2. Slowly add in the vinegar and oil until well blended.
3. I opted to shake mine in a mason jar for great results!
4. It was noted that this made a good bit of dressing. I made the full amount and used this to dress a second salad made with mixed greens and fruits.
An individual serving idea
This salad is a refreshing change and a welcomed change for summer.
