Peanut Butter and More Peanut Butter in My Pie

Someone asked the other day for a dessert, sans chocolate, but still memorable for a small group.  I immediately thought about this pie that I have made and carried to many events over the years.  My brother does not like chocolate, but he does like his sweets.  This was a fun recipe to create and share with him.  I love all the layers of Peanut Butter!  You can create this pie with a pre-made crust, but the option to add another layer of peanut butter makes this pie even more special and decadent.   It is very rich, so sharing is always appropriate.

Nutter Butter Frozen Peanut Butter Pie

Ingredients:

Filling:

  • 8 ounces cream cheese, softened
  • ¾  cup granulated sugar
  • 8 oz. non-dairy topping, thawed and divided
  • 1 cup peanut butter, I have used creamy and chunky for this recipe.
  • 1 ½ -- 2  tablespoons pure vanilla extract.  I like the full vanilla flavor.

Directions:

  1.  In a stand mixer, cream together, cream cheese, sugar, peanut butter and vanilla until smooth.
  2. Then, gently fold in 1 ½ cups of the whipped topping.  Garish with the last bit of whipped topping.

Crust:

  • One package of Nutter Butter Sandwich Cookies
  • 5 tablespoons of melted butter

Directions:

  1. You can use a pre-made Chocolate or Graham Pie Crust, but I encourage you to keep reading on how to really make this a game-changing recipe.
  2. If you really want to put this recipe over the TOP, create your own crust with Broken Nutter Butter Peanut Butter Sandwich Cookies ( about ¾ of the bag or 24 cookies with 5 tablespoons of melted butter…)   This extra step is very worthy in this recipe!
  3. Crush these Nutter Butter Cookies in a zip-lock bag.  Then mix in the melted butter.
  4. Press into your favorite pie plate.
  5. Then top with the peanut butter filling and then finish the top of the pie with the extra whipped topping.

Freeze up to 4 hours or overnight until firm.

Let stand at room temperature about 30 minutes for easier slicing.

Garnish with remaining the last cookies (if you have not already eaten!).  Or, garnish with chocolate syrup and peanuts.

Enjoy this very rich and memorable treat with a pot of coffee and some good friends.  Again, this is a pie that needs to be shared!
